Batata Vada

Ingredients:
250 g – boiled and peeled potatoes
1 – small onion, minced
1/4 tsp – mustard seeds
1 tsp – urad dal
2 – green chillies, minced
handful of coriander leaves
a few curry leaves, sliced
1/4 tsp – turmeric powder
a pinch asafoetida
1 1/2 cups – gram flour
salt and chilli powder to taste
Method
- Heat 1 tbsp. oil and put in mustard seeds and dal, when the dal turns red, put in chillies, onion and curry leaves and cook till soft.
- Add potatoes, salt, turmeric and coriander leaves.
- Mix well and remove from fire, cool and form into round balls.
- Mix together gram flour, asaofeotida, salt and chilli powder.
- Put in enough water to form a thick batter.
- Dip the balls one by one into the batter and deep fry to a golden brown colour.
- Drain and serve with chutney of your choice.
