Crab Soup

Ingredients:
1/2 cup – fresh crabmeat
1″ piece – ginger, sliced
1/2 cup – sliced onions
1/4 cup – cream
2 – egg whites
2 tsps – cornflour
salt and pepper to taste
Method
- Mix cornflour with 2 tbsps. water.
- Beat eggs nicely with cream, add cornstarch and beat again nicely.
- Heat 4 tbsps. oil and fry ginger and onions till transparent.
- Add crabmeat and salt and fry for 5 mins, put in the stock and cook till the meat is done.
- Add egg mixture gradually stirring all the time.
- Simmer over a very slow fire for 1 minute and serve hot.
