			<content:encoded><![CDATA[<p>Chicken &#8211; 1/2 kg<br />Basmathi rice &#8211; 3 cups<br />Ghee &#8211; 5 tsp<br />Big Onion &#8211; 1 sliced<br />Tomoto medium &#8211; 1 (chopped)<br />Green chillies &#8211; 5<br />Ginger &#8211; 2 inch<br />Garlic &#8211; 4 pods<br />Cashew nuts &#8211; 10<br />Saffron &#8211; a pinch<br />Coconut milk &#8211; 1 cup<br />Coriandar leaves &#8211; 1/2 cup (chopped)<br />Mint leaves &#8211; 1/2 cup (chopped)<br />Water &#8211; 5 cups<br />Cardamom &#8211; 2 nos<br />Cinnamon &#8211; 1 inch stick<br />Jiji flower &#8211; 1<br />Anasi flower &#8211; 1<br />Cloves &#8211; 3<br />Salt to taste</p>
<p>Clean and wash the Chicken pices. Drain all the water and keep it aside.<br />Make a paste with green chillies, ginger and garlic.<br />Tsake a pressure cooker and heat with 5 tsp of Ghee. Then add Cardamom, Cloves, Anasi flower, Jaji flower, Cashew nuts and Cinnamon.<br />Try for few seconds. Then all Oninon and saute for 2 minutes.<br />Then add Tomato pieces, Chicken pieces and paste. Saute until the row smell disappears.<br />Now add the washed Basmati rice and combine well.<br />Then add Coconut milk, water Coriander leaves and Mint leaves. Again combine well and close the pressure cooker.<br />Pressure cook for 2 wistles and switch off the stove.</p>

<p>2 bowls cooked cold rice<br />
100g prawns, shelled<br />
100g chicken pieces<br />
3 pips garlic, pounded<br />
3 red chillies, chopped<br />
50g green peas, corns and diced carrots<br />
1 egg beaten<br />
4 tbsp oil</p>
<p><strong>Seasoning</strong><br />
2 tbsp thin soy sauce<br />
1/2 tsp Chinese cooking wine(optional)<br />
Some chopped spring onions for garnishing</p>
<p><strong>Method</strong></p>
<ol>

<p align="justify">Heat oil and saute the garlic.</p>
</li>
<li>
<p align="justify">Add prawns and chicken and stir fry until cooked.</p>
</li>

<p align="justify">Add red chillies, rice, green peas,</p>
</li>
<li>
<p align="justify">Stir fry until well mixed and hot</p>
</li>
<li>
<p align="justify">Add  in the seasoning, then the beaten egg and continue to fry until rice is dry.</p>

<p align="justify">Add salt and pepper.</p>
</li>
<li>
<p align="justify">Dish on to plate and garnish with spring onions.</p>

<ol>
<li>Clean, de-vein and wash the prawns well. Drain thoroughly.</li>
<li>Wash and dry parsley. Finely chop the parsley and keep aside.</li>
<li>Place prawns, butter, garlic paste, parsley, mustard paste, lemon juice and freshly crushed peppercorns in a microwave bowl.</li>
<li>Add salt and mix well. Cook, uncovered on microwave HIGH (100%) for 3 minutes. Serve hot.</li>

<li>Smear salt on fish &amp; set aside for a few mins.</li>
<li>Combine all the ingredients except the fish&amp; coriander in a saucepan &amp; bring   to a boil.</li>
<li>Wash the fish and add.</li>
<li>Simmer covered for 2 mins &amp; then add coriander.</li>
<li>Simmer uncovered until fish is cooked (about 10 mins).</li>
<li>Serve hot with garlic bread.</li>

Tamarind &#8211; 3 cm round lump<br />
Oil &#8211; 4 tbsp<br />
Mustard &#8211; 1 tsp<br />
Onion &#8211; 1 cup, finely chopped<br />
Curry leaves &#8211; few<br />
Shelled, cleaned prawns &#8211; 500 gm<br />
Turmeric powder -1½ tsp<br />
Chili powder &#8211; 2 tsp or to taste<br />
Pepper powder &#8211; 1½ tsp<br />
Shelled and cleaned prawns &#8211; 500 gm<br />
Salt &#8211; to taste<br />
Grated coconut &#8211; 1 cup</p>

<ol>
<li>Soak tamarind in 1½ cup hot water and extract the pulp.</li>
<li>Heat the oil. Add mustard. When they crackle add onion and curry leaves. Fry till onions are brown.</li>
<li>Add prawn, salt and turmeric. Fry till prawns are cooked. Add chili and pepper powder.</li>
<li>After 30 seconds, add tamarind pulp. Simmer for 5 minutes. Add coconut and simmer till almost dry.</li>
<li>Serve with steamed rice or chapathi.</li>

garlic &#8211; 2 tsp, finely chopped<br />
onion &#8211; 1 cup, finely chopped<br />
chili powder &#8211; ½ tsp<br />
cumin powder &#8211; ½ tsp<br />
turmeric powder &#8211; ½ tsp<br />
freshly ground black pepper powder &#8211; ¾ tsp<br />
ready to use tamarind pulp &#8211; 1 tsp</p>

<ol>
<li>Chop the fish into tiny pieces.</li>
<li>Heat oil, fry garlic till brown.</li>
<li>Add onion, fry till light brown.</li>
<li>Add all the powders.</li>
<li>Add fish, salt and tamarind.</li>
<li>Add ¼ cup of water and simmer till the fish is cooked and the mixture thick.</li>
<li>Place some filling on chapathi or paratha.</li>
<li>Sprinkle with some finely chopped fried curry leaves.</li>
<li>Roll up and serve.</li>
</ol>
<p><strong>Note:</strong><br />
Make round chapathis or layered (lacha) parathas and use any of the following fillings to give a new touch to Katti rolls.</p>

4 cup &#8211; dates, deseeded and chopped fine<br />
300g &#8211; finely grated fresh coconut<br />
250g &#8211; sweetened mawa, crumbled<br />
1/2 cup &#8211; sugar or according to taste<br />
1/12 cup &#8211; almonds, coarsely chopped<br />
1 tsp &#8211; cardamom powder<br />
3/4 cup &#8211; ghee<br />
1/2 cup &#8211; roasted poppy seeds</p>

<ol>
<li>Grind the dates to a coarse paste.</li>
<li>Heat ghee and lightly fry the dates, crumbled mawa, coconut and sugar till the mixture is a solid mass.</li>
<li>Add almonds and cardamom powder and continue to fry till the mixture leaves the sides of pan.</li>
<li>Remove the mixture from fire.</li>
<li>Pour the date-mawa mixture into a tray to cool slightly.</li>
<li>Divide the mixture into even sized portions.</li>
<li>Shape each portion into a laddoo.</li>
<li>Spread roasted poppy seeds in a flat plate; roll the laddoos in the poppy seeds and serve.</li>
