250g boneless white-fish fillets, cubed<br />
3 cups water<br />
400ml thick coconut milk<br />
1 chopped white onion<br />
1tbsp grated ginger<br />
2 tbsp any herb like fresh lemongrass or parsley<br />
1 small red/green chili &#8211; chopped<br />
1tbso fish sauce or oyster sauce<br />
salt to taste<br />
2 tbsp lime juice<br />
100g finely chopped cabbage<br />
1/4 cup fresh chopped coriander leaves</p>

<ol>
<li>Smear salt on fish &amp; set aside for a few mins.</li>
<li>Combine all the ingredients except the fish&amp; coriander in a saucepan &amp; bring   to a boil.</li>
<li>Wash the fish and add.</li>
<li>Simmer covered for 2 mins &amp; then add coriander.</li>
<li>Simmer uncovered until fish is cooked (about 10 mins).</li>
<li>Serve hot with garlic bread.</li>

1&#8243; piece &#8211; ginger, sliced<br />
1/2 cup &#8211; sliced onions<br />
1/4 cup &#8211; cream<br />
2 &#8211; egg whites<br />
2 tsps &#8211; cornflour<br />
salt and pepper to taste</p>

<li>Mix cornflour with 2 tbsps. water.</li>
<li>Beat eggs nicely with cream, add cornstarch and beat again nicely.</li>
<li>Heat 4 tbsps. oil and fry ginger and onions till transparent.</li>
<li>Add crabmeat and salt and fry for 5 mins, put in the stock and cook till the meat is done.</li>
<li>Add egg mixture gradually stirring all the time.</li>
<li>Simmer over a very slow fire for 1 minute and serve hot.</li>

1 handful &#8211; fine egg noodles<br />
2 tbsps &#8211; each of shredded cabbage, bamboo shoots, mushrooms and French beans</p>

<ol>
<li>Put ajinomotto in water and bring to a boil, reduce heat and put in all the vegetables and boil for 5 mins, put in the corn and boil for 5 more mins.</li>
<li>In the meanwhile boil noodles according to the instructions on the box and drain.</li>
<li>Mix cornflour in 6 tbsps. water and add to the soup.</li>
<li>When soup thickens slightly, add the egg gradually stirring all the time.</li>
<li>Remove from heat and mix in noodles, serve piping hot.</li>
<li>This soup tastes delicious if soya sauce, chilli sauce and pickled or vinegar chillies are added to it before eating.</li>

<ol>
<li>Soak chick peas in water over night.</li>
<li>Wash the mushrooms well and soak in 1 cup of hot water.</li>
<li>Heat the oil in a pressure cooker. Fry garlic and onion till fragrant.</li>
<li>Add tomato and chick peas, drained from soaking water.</li>
<li>Pressure cook for 15 minutes.</li>
<li>When the pressure drops, open the cooker, cool the contents and blend till smooth.</li>
<li>Drain the mushrooms and add the water to the blended soup.</li>
<li>Discard the stalks and chop the caps of mushrooms finely and add them to the soup.</li>
<li>Heat thoroughly and serve garnished with shredded lettuce.</li>

ï¿½ cup &#8211; tomato, chopped<br />
2 tbsp &#8211; olive oil<br />
4 cloves &#8211; garlic, crushed<br />
4 cloves &#8211; garlic<br />
1 tsp &#8211; freshly ground black pepper or to taste<br />
salt to taste</div>

<ol>
<li>Heat the oil in a saucepan or wok and fry the garlic until soft but not brown.</li>
<li>Add the chicken and stir fry for 5 mins.  Cool a little.</li>
<li>Add the water and mushrooms.</li>
<li>Bring to the boil and simmer for 10 mins.</li>
<li>Add the lemon juice.</li>
<li>Cover, and cook gently for a further 10 mins.</li>
<li>Add the chillies, spring onions and ginger. Remove from the heat.</li>
<li>Sprinkle with coriander leaves before serving.</li>

350 g &#8211; chicken breast, diced<br />
25 g &#8211; straw mushrooms, chopped<br />
2 &#8211; small green chillies, sliced in rings<br />
2 &#8211; spring onions, chopped<br />
2 tbsps &#8211; olive oil<br />
1 clove &#8211; garlic, chopped<br />
4 cups &#8211; water<br />
2 tbsps &#8211; lime juice<br />
1 pinch &#8211; ground ginger<strong>For garnishing:</strong><br />

<ol>

<p align="justify">Very finely chop (either manually or in the electric chopper), the capsicum., cabbage, onion, carrot, cauliflower, bean, ginger, garlic, all together.</p>
</li>

<p align="justify">Heat oil in a wok or pan, add all vegetables and stir fry for 3-4 minutes.</p>
</li>
<li>
<p align="justify">Add 2 1/2 cups water and bring to a boil.</p>
</li>
<li>
<p align="justify">Meanwhile, mix cornflour in the remaining water and add to the boiling soup.</p>
</li>
<li>
<p align="justify">Stir continuously, till boil is resumed. Cook till the clarity returns.</p>
</li>
<li>
<p align="justify">Add the soyasauce, salt, sugar and crushed chilli.</p>
</li>
<li>
<p align="justify">Stir well. Serve piping hot with green chilli in vinegar and soyasauce.</p>

3-4 leaves mint finely chopped<br />
3-4 leaves coriander finely chopped<br />
1/4&#8243; ginger peeled<br />
1 pod garlic<br />
1/2 dried red chilli deseeded and crushed well<br />
1/2 tsp. soya sauce<br />
salt to taste<br />
1 tsp. oil<br />
1 tbsp. cornflour<br />
3 cups water or vegetable stock<br />
1/2 tsp. sugar</li>
